Butter is cool!
May saw a significant increase in butterfat prices mainly due to the fact that April’s production of butter was down more than expected compared to March, and butter usage is ramping up in Europe. The U.S. had carried the “Out with Margarine/Butter is Cool!” banner the last several years. Now Europe and many parts of the world are adapting the same mantra. The result, of course, is that prices increase. For ice cream mix users, it means cream prices are higher. In the U.S we’ve seen historically high cream prices for the last 3 years. The rest of the world is experiencing it now. Mix prices will likely be high this summer…we’re just not sure how high they’ll get.
